I suspect it is (if its true of course) somehow because the producers just couldn't help acknowledge at some level that such traits really were jewish traits, and it would be terrible miscasting to put a goy in. The same reason they always cast Italian-Americans like De Niro, Peschi, and Liota and others in gangster, criminal, and mafia roles (although the Italians now certainly never seem to complain.
Tough break ADL types. Jews have an attachment to their craft, and would never let a goy who could never do the part play him :lol:

In issue #391 (Summer 1996) on page 3 of his Truth at Last newspaper he wrote that DeNiro is half Jewish. :huh:

He's downright devilish when it comes to splitting Skywalker from his mother at the tender age of nine. This early wounding is psychoanalytically supposed to have been part of the cause of Anakin's fear and depression which ultimately turned him into Darth Vader. So Watto's role is seen mythically to be part of the incipient root of evil..."

It never occured to me that Wattoo was supposed to be Jewish, but after watching several episodes of Star Trek the thought occured to me that "the Ferengi was what Jews are supposed to evolve into in a few hundred years." So it wouldn't surprise me at all if it was done consciously on the part of the creators of the series.
