How do I protect against someone stealing a name once I register a domain and start advertising. Do I have to incorporate?

Once you obtain a domain, it is yours for however long you keep the registration fee paid for it current.
Nobody can "steal" it from you.

The other thing you may want to consider if it is financially feasable is getting the similar names... if you register the .com, you may want to grab .net and .org as well if they sre all still available.
